The Asociación de Productores Cafetaleros de la Cuenca del Rio Marañón (APROCCURMA) has worked directly with 124 women producers to set up coffee production on farms owned and managed by women. Many women in the northern highlands of the Rodríguez de Mendoza province depend on income from coffee to support their families. They use organic practices to manage a few hectares of land planted with shade trees, bananas, corn and beans. After careful harvesting and sorting, the cherries are pulped, fermented, washed and dried on the farm using micromills.

After harvesting, the cherries are taken to the washing station, where they undergo a complete process to remove the outer pulp and skin. This is followed by a soaking in water to remove any remaining mucilage residue. Next, the coffee beans are spread out on drying tables in full sunlight. This drying process, which can last several days, requires constant supervision to avoid overheating the beans or contamination.
