Also called vacuum coffee makers , the siphon coffee maker does not have the same commercial success as Chemex or French press coffee makers. But it is appreciated by the most picky baristas because it allows them to faithfully reproduce a very specific coffee experience while respecting a given preparation recipe.
The most famous models (and brands) of this range of utensils are the Napier around 1840, the Cona after 1920 and the KitchenAid Siphon since 2016. We like to prepare coffee with a siphon as well for the final quality of the infusion , only for the pleasure that the somewhat “spectacular” preparation rite provides.
Everything you need to prepare filter coffee with a siphon
- Your siphon coffee maker
- 31g semi-fine grind coffee
- 567ml of water which will be brought to a temperature of 93.5°C / 200°F and will be used for infusion
- An additional quantity of water, heated to the same temperature of 93.5°C / 200°F, for preheating
- A jug
- Infusion time: 3 to 4 minutes
Preparation steps:
- Wash and collect required utensils
- Fill the bottom jar with water
- Condition the filter with hot water
- Insert the filter into the top bottle
- Place the bottle back on top of the lower jar
- Seal the joint well
- Place the coffee maker on the burner
- When the water begins to boil and transfer to the top bottle, stir lightly to cool
- Lower the heat temperature, making sure to stay close to 92°C
- Immediately pour the ground coffee into the hot water contained in the upper bottle
- Stir with a spoon so that all the coffee is in contact with the hot water
- Let sit and steep for 1 - 2 minutes
- Stir again to fully extract the oils from the coffee
- Remove the burner to cool and allow the coffee to fall back into the lower jar
- Enjoy your coffee when all the filtered beverage is collected in the jar
