Sold by invitation auction only, Santa Felisa's lots are renowned around the world for their amazing and unique coffees that won several Cup of Excellence recognition awards. We were able to get our hands on one of their top lots of the year 2021.
It's an SL-28 from the New Orleans Farm in the Chimaltenango district, which was named Blood Moon to represent its flavor profile. This coffee that has been depulped and fermented with a wild yeast ''Saccharomyces cerevisiae'', which amplifies everything that taste good in a coffee. Wild yeast is as its name indicates, wild. In other words, it is the yeast naturally present in the air and on vegetation. Coffee fermented with this type of yeast produces a cup that is almost impossible to reproduce, and that is why this SL-28 is called the Blood Moon, because it is as intense as it is unique, and as ephemeral as a moonburst, since we only have a small batch of this delicious mayan god's elixir.
