When the sweet and nostalgic craving strikes, our S'mores Moka are here to bring back memories of summer and campfires. This recipe combines rich, velvety chocolate, the sweet and chewy taste of marshmallow, and a touch of cocoa for the perfect balance. A comforting experience that will delight young and old alike.

Ingredients needed

— 20 g of coffee ground into espresso
200 g of milk of your choice
25 g of 62% Nicaraguan dark chocolate Bassan
— 24 ml marshmallow syrup (3 pumps)
Homemade or spray whipped cream
— A pinch of cocoa powder (decoration)

1. prepare the espresso

Start by extracting a hot, rich, full-bodied espresso from your favorite coffee machine. The coffee will serve as a base and balance the sweetness of the white chocolate.

1. grind the coffee: Use approximately 20g of freshly ground coffee for optimal extraction.

2. machine preparation: Preheat your espresso machine. Make sure the portafilter is clean and preheated to avoid thermal shock during extraction.

3. coffee tamping: Place the ground coffee into the portafilter and tamp it evenly with firm, consistent pressure. This will ensure an even extraction.

4. extraction: Insert the portafilter into the espresso machine and start the extraction. You want to get about 30-40 ml of espresso in 25-30 seconds. The result should be a rich espresso, with a golden crema.

2. heat the milk

Use the steam nozzle of your espresso machine to froth and heat the milk.

1. prepare the milk: Pour fresh milk into a stainless steel pitcher until one-third to one-half full.

2. purge the nozzle: Before you begin, briefly open the steam nozzle to remove condensation.

3. froth: Place the nozzle just below the surface of the milk and turn on the steam. Add air, creating a slight hissing sound for 3 to 5 seconds.

4. heat: Immerse the nozzle a little more to heat the milk by creating a whirlpool. Stop when the pitcher becomes too hot to touch (60-65 °C).

5. finishing: Tap and swirl the pitcher to smooth the foam, then serve.

Tip: Clean the nozzle immediately to avoid any milk deposits.

3. Melt the chocolate

Place the Nicaruja chocolate in a bain-marie and stir until completely melted. This chocolate, with its rich and deep notes, gives the mocha all its intensity.

4. Assemble your mocha s'mores

Pour the espresso, hot milk and chocolate into a preheated mug. Add three pumps of marshmallow syrup and top it off with a generous dollop of whipped cream.

5. final decoration

Sprinkle a pinch of cocoa powder over the whipped cream for an aesthetic and flavorful touch. If you want to take it a step further, add a few pieces of graham crackers for a nod to real s'mores.
