brazil - olhos d'agua

producer: Flávio Márcio Ferreira da Silva

Originally from Campos Altos, in the heart of the Cerrado Mineiro, Flávio Márcio Ferreira da Silva embodies the new generation of passionate producers in this iconic region of Brazil. Introduced to coffee farming at a very young age alongside his father, he has transformed his family heritage into his life's work. Today, he runs his own plantations with the same rigor and vision: to produce exceptional coffees while respecting the soil and natural cycles. His farm, certified by Rainforest Alliance, Regenagri, CAFE Practices, and Orfeu, stands out as a model of sustainability and agronomic precision.

Processing: honey process | 90 points

The cherries, harvested at 90% optimal ripeness, are first fermented in closed drums for 30 hours before being pulped and then returned for a second phase of 30 hours. After drying on an asphalt patio and a controlled rest period of 10 days, the coffee is stabilized and prepared for export.

Sensory profile: bright + delicate

A bright and complex cup, marked by notes of orange blossom, white grape, pineapple, and passion fruit, supported by a lively acidity of lime and green apple. The texture evokes black tea and sugar cane, while the finish reveals nuances of mandarin, plum, and blackcurrant.

additional information

This coffee is roasted on request. We do not hold any stock of this coffee. It is roasted only when ordered, to highlight its unique characteristics: origin, variety, terroir and processing method.

To ensure that your coffee is as fresh as possible, we roast it to order, leave it to rest, then pack it carefully before dispatch.

Allow 3 to 5 days for preparation and a further 3 to 5 days for delivery.

This time allows the coffee to develop its full aroma, so that it's ready for extraction as soon as it arrives at your door.
