Located in Huehuetenango, El Injerto is one of Guatemala's most prestigious farms. Founded in 1874, it is now run by the 3rd and 4th generations of the Aguirre family. Nestled between 1,460 and 1,980 m above sea level, it devotes a large part of its land to natural tropical forest. The Geisha plot is at an altitude of 1,811 m. Recognized for its excellence, the farm is Rainforest Alliance certified and committed to sustainable practices.
Treatment
This batch has been washed using the Peak Performance Process (P3), an exclusive protocol developed by El Injerto. It includes full fermentation, prolonged soaking after washing, careful sorting and slow drying, to maximize the aromatic clarity and longevity of the coffee.
Sensory profile
This washed Geisha rated 89 points reveals a refined profile, dominated by floral aromas of jasmine, brown sugar and raspberry, lifted by a lively acidity of tangerine and grape. An elegant, complex and perfectly mastered cup.
