THE PRODUCER

Jesús Aguirre Panamá was the very first owner of the estate, he acquired it at the end of the 19th century, more precisely during the year 1874. Although he had the farm since 1874, it was only in 1900 that he started growing coffee trees and producing coffee. Today, the farm is managed by the 3rd and 4th generation of the Aguirre family. They work with a large team and always with the same mission: to produce delicious specialty coffee while maintaining environmentally friendly agricultural practices. Located on the Huehuetenango plateaus, very close to Mount Sierra de los Cuchumatanes in Guatemala, the plantation is more than 1900 meters high. It is at these heights that the most delicate and exotic varieties like the Legendary Geisha are planted. The story of this unique batch began when Mr. Aguirre Senior received the Geisha coffee beans as a gift when he was visiting his good friend at Hacienda La Esmeralda in Panama. “It was an honor to receive these grains, we will treat them as if they were royal seeds,” he said. It was actually from that day that the name Legendary Geisha came to life.

TREATMENT

“Natural” processing also known as dry processing is the oldest way of processing coffee. At El Injerto, the Geisha variety was dried for over 10 days in partial shade on raised beds in a greenhouse that can circulate air well around the cherries, allowing for more uniform drying. Once the cherries are thoroughly dry, the parchment is mechanically removed and the green coffee is then stored to rest a little before being exported.

PROFILE AND BOTANICAL VARIETY

The Geisha variety was discovered in a forest in Ethiopia in the early 20th century. This variety was discreet and flew under the radar. It was not until 2005 that it earned its place among exceptional coffee varieties when the Peterson family of Hacienda La Esmeralda presented it at the Best of Panama auction and broke the record of the time for the highest selling price at green coffee auction. The Legendary Geisha of El Injerto offers you a fruit-filled cup with flavors of grapefruit and plum, with a lively and round taste of grape and red wine, without forgetting the sweet sweetness on the tip of the tongue, of honey and of cane sugar.
