The coffee comes from family farms grouped together in the Asociación de Mujeres Caficultoras del Cauca (AMUCC), an association of 274 women from the municipalities of Balboa, Cajibio, Caldono, El Tambo, Florencia, La Sierra, La Vega, Morales, Piendamo, Popayan and Timbio, in Cauca, Colombia. This region, a small paradise with fertile valleys thanks to the altitude, humidity and volcanic soil, has also experienced the horrors of armed conflict. It is in this difficult context that AMUCC was born, representing a symbol of resilience and solidarity.

After harvest, the cherries are transported to a washing station where they undergo a thorough washing to remove the pulp and skin. The mechanical washing is followed by a soaking to remove mucilage residue. The beans are then sun-dried on tables, a process that requires constant monitoring to prevent overheating or contamination. Once dried, the beans are ready for shipping and roasting.

This coffee offers a symphony of flavors: juicy pineapple pairs with zesty lemon and refreshing lime, while floral notes of lavender and rosemary add a delicate touch. Sage brings a subtle herbal note, creating a savory taste experience.
