El Injerto, located in Huehuetenango, is one of the coffee farms
Guatemala’s most renowned. Founded in 1874 by Jesús Aguirre Panama, the farm is now managed by the third and fourth generations of the Aguirre family. Spread across steep terrain with elevations ranging from 1,460 to 1,980 meters, the farm dedicates two-thirds of its land to natural rainforest. The legendary Geisha plot is located at 1,811 meters above sea level. El Injerto is distinguished by its commitment to sustainability, social responsibility and environmentally friendly farming practices. The harvest, carried out between January and April, is carried out by expert pickers, with rigorous quality control. The farm is Rainforest Alliance certified.
process
The processing of this coffee is unique, El Injerto calls its washing process the “Peak Performance Process (P3).” In short: an exhaustive process of hand sorting, separating, and selecting coffee beans throughout the wet and dry processing stages. This includes a full fermentation, a 24-hour soak after washing, and a very slow drying. This process enhances the flavors and extends the life of the coffee.
profile
This Geisha offers a refined taste experience, where the floral aromas of jasmine mingle with the sweetness of brown sugar and raspberries. Lively notes of tangerine and grape blend harmoniously with a creamy touch and a base of black tea.
