Santuário Sul is Luiz Paulo’s experimental farm, spread over 300 acres in Carmo de Minas, where 30 varieties of coffee are grown. This farm has won prestigious awards such as the Cup of Excellence. Carmo’s reputation as a quality coffee-producing region is largely attributed to its ideal setting in the Serra da Mantiqueira mountains, renowned for their abundant natural springs. Luiz Paulo’s expertise in processing natural coffees, such as this Sudan Rume, ensures exceptional flavours through precise and careful techniques.

The natural process, also called the dry method, is one of the oldest and most traditional methods of coffee processing. In this process, freshly harvested coffee cherries are not pulped to remove the outer pulp. Instead, the whole cherries are simply spread out on drying platforms, often raised beds in the open air, to dry in the sun.

This Sudan Rume variety coffee from Carmo Coffees offers a unique experience. It stands out for its floral notes of rose, bergamot and black tea. It also has notes of lemongrass and cardamom, with a lively acidity and tangy notes of green grape, lemon, lime and apple. Its fruit profile is more reminiscent of plum than berry, with nectarine sweetness and apricot aromas, as well as a unique guava fruit complexity.
