THE PRODUCER
UCA Miraflor was founded in 1992 under a cooperative model promoting diversified and agroecological production and territorial protection. By obtaining nature reserve status, Miraflor Moropotente also integrates the first community-based ecotourism model in Nicaragua. Currently, UCA Miraflor is made up of 12 grassroots cooperatives located in 36 communities in the protected area and works with more than 400 small producers, including several women and young adults, including Silvia González.
This lot is presented entirely by Silvia González and her team on her agricultural farm in Estelí, Nicaragua.
TREATMENT
The washed processing begins with picking the coffee cherries and putting them through the pulping machine to remove the cherry and skin. The beans are then placed in a washing tank for a set period of time, usually 24 to 36 hours, during which cherry residue is removed. They are then dried on the drying terraces until they reach a humidity level of 11%. This treatment results in a cup with a pure taste. It's usually not that fruity. The acidity is generally higher and the taste qualities of the cup are brighter.
PROFILE AND BOTANICAL VARIETY
Maragogype descends from the Arabica variety. Initially discovered in Brazil, it is now produced in several other South American countries. The particularity of this variety is that the coffee beans are up to 3 times larger than other beans. Plantations of this variety have a lower yield, so it is rarer. It is therefore a coffee of exceptional quality. It is generally a mild coffee, with spicy notes, as well as touches of melting chocolate and orange marmalade.
With this microlot, you will be able to taste a fragrant, but balanced coffee, with notes of tropical fruit, apple, chocolate, with a lively, but stable acidity with a creamy body that is persistent on the palate and notes of black tea .
