Marcelo Ribeiro is the co-founder of Bioma Café, a company based in Campos Altos (Minas Gerais) focused on the sustainable production of specialty coffees. Heir to a passion passed on by his father, he now farms alongside Flávio Márcio Ferreira on the Olhos D'Água farm. Their approach focuses on quality, transparency and the preservation of local ecosystems.

Processing

This batch has been processed using the Cereja Descascado method, the Brazilian equivalent of the Honey Process. The cherries are pulped, but some of the mucilage is retained during drying, bringing sweetness, complexity and a velvety texture to the cup.

Sensory profile

This coffee from the Arara variety reveals an elegant, gourmet profile: honey, caramel, juicy peach, with delicate tangerine acidity. The body is silky and balanced, enriched by subtle hints of cinnamon and hazelnut. A refined coffee, at once sweet, fruity and complex.
