Desalegn Abebe Adela, a 45-year-old coffee farmer and father of five, owns a 1.54-hectare farm in Kebele Tulu Gola, Nansebo Woreda, located in the West Arsi Zone, Oromia Region of Ethiopia. He mainly grows the 74112 coffee variety, which he processes into natural coffee. Inspired by the success of other participants from his region in the Ethiopian Cup of Excellence, Desalegn decided to enter the competition in 2021. Since then, he has been steadily improving, going from no winning entries in 2021 to placing 21st this year with his 74112 natural, scored at 88.06 points!

In Ethiopia, natural coffee processing begins with drying whole coffee cherries in the sun. The cherries are spread out on raised beds or patios and turned regularly for even drying. This process allows the cherries to ferment slightly, developing unique flavors. Once dried, the cherries are pulped to remove the skin and mucilage, leaving the coffee beans still wrapped in their parchment. Finally, the beans are sorted, cleaned, and stored before roasting.
