Fazenda Rainha is a coffee estate located near São Sebastião da Grama, in the state of São Paulo, Brazil. Covering 280 hectares, it includes 200 hectares of venerable Yellow Bourbon trees, some producing coffee for over 50 years. The management of the Fazenda Rainha was entrusted to José Renato Gonçalves Dias, whose passion for coffee goes back to his great-grandparents who worked on these same lands. Agronomist by training, José combined his inherited passion with knowledge academics to create a biodiverse, rich environment in microorganisms and beneficial insects, promoting a healthy coffee culture.
process
When harvesting this yellow Bourbon, Mr. José Gonçalves Dias chose to proceed with the natural treatment. The cherries are first sorted and floated to remove the less dense and damaged coffee. They are then pulped and left to dry on patios for at least 30 days, with the mucilage still attached. Once dry, the cherries are stored in wooden silos until they are ready to be ground and exported.
profile
This yellow Bourbon offers a delicious fusion of flavors. From the first sip, it reveals notes of creamy peanut butter, bringing comfort and indulgence. Then, touches of fresh apple juice balance the nutty flavors, followed by the sweetness of almond and the juicy burst of cherry.
