You've probably noticed or heard it: the price of coffee keeps increasing. I want to take a moment to explain why and how we are adapting our coffee offer and strategy at Brûlerie du Quai.

Here is a copy of the letter sent to Ms. Céline Beaulieu, coordinator, certification and compliance, with whom I have been discussing the definition of chocolate products for over a year.
As mentioned in the text, the popularity of subcontracting, or the use of semi-processed products in the food industry makes the work of certifiers complex. Several manufacturers, for reasons of profitability, keep the origin of their ingredients hidden, while taking advantage of the local product label.
I also want to mention the goodwill of Aliments Québec in the face of my requests which come up against a broader situation which affects several areas at the same time.
It's quite a challenge to draw the line between definitions, especially when certain companies make millions of dollars by advertising themselves as Quebec products when in fact it's more or less true.

I think it is high time that we set up a rule to set once and for all the space that is acceptable to take when visiting a coffeeshop. In this way, the baristas and the management will not have to break the party of your moment by coming to tell you that you take too much space on the table.
I'll tell you an anecdote. I was on vacation somewhere in Quebec. In a restaurant ranked #1 according to trip advisor, really good, the food was good, good service. When I got to dessert, the waiter offered me a coffee.
I then ask him what coffee he serves, he answers: fair trade coffee.
I now have the right to officially announce that we will be part of the cast of candidates who made an offer to the Dragons as part of the show “In the Eye of the Dragon” broadcast on Radio-Canada.
