The Asociación de Productores Cafetaleros de la Cuenca del Rio Marañón (APROCCURMA) is working with 124 women producers to establish coffee production on farms owned and managed by women. Many women in the northern highlands of Rodríguez de Mendoza depend on coffee for their family income. They use organic practices to manage a few hectares planted with shade trees, bananas, corn and beans. The cherries are carefully harvested and sorted, then pulping, fermentation, washing and drying are carried out on the farm using micro-mills.

After harvest, the cherries are washed to remove the outer pulp and skin, then soaked to remove any remaining mucilage. The berries are then dried on tables in full sun. This drying, which can last several days, requires constant monitoring to avoid overheating or contamination.
