Here is a copy of the letter sent to Ms. Céline Beaulieu, coordinator, certification and compliance, with whom I have been discussing the definition of chocolate products for over a year. As mentioned in the text, the popularity of subcontracting, or the use of semi-processed products in the food industry makes the work of certifiers complex. Several manufacturers, for reasons of profitability, keep the origin of their ingredients hidden, while taking advantage of the local product label. I also want to mention the goodwill of Aliments Québec in the face of my requests which come up against a broader situation which affects several areas at the same time. It's quite a challenge to draw the line between definitions, especially when certain companies make millions of dollars by advertising themselves as Quebec products when in fact it's more or less true.

I think it is high time that we set up a rule to set once and for all the space that is acceptable to take when visiting a coffeeshop. In this way, the baristas and the management will not have to break the party of your moment by coming to tell you that you take too much space on the table.
