Aceh, in North Sumatra, is renowned for its unique coffee, thanks to its heirloom cultivars and fertile microclimates. This mountainous territory, around Lake Laut Tawar and Takengon, is the heart of Aceh’s coffee production. PT Ketiara, founded in 2009 by Ms Rahmah, is a major player in the region. A former cherry harvester, Ms Rahmah has become a respected figure in Indonesia’s coffee industry, promoting gender diversity in the male-dominated industry. Her cooperative, which was certified as Fair Trade in 2011, has grown from 38 to nearly 2,000 members. Under PT Ketiara, the Ratu Ketiara Gayo (RKG) cooperative, established in 2017, is led by three of Ms Rahmah’s protégés: Ms Indayana, Ms Dini and Ms Murul Kemala. RKG, with 971 members, 80% of whom are women, cultivates 1,234 hectares of coffee, reinforcing the region's reputation for premium coffee.

The washed coffee process in Indonesia begins with the pulping of the cherries to remove the outer skin. The beans, still covered in mucilage, are then fermented in vats for 12 to 48 hours to break down the mucilage. After fermentation, the beans are washed with water to remove any residue and then dried in the sun.
