Mr. Nasir Allahaba, 62, is from Hayma Kharijiya and has been growing coffee since he was 15. His farm covers about 200 libnas (a unit of measurement used in Yemen), and he has planted more than 100 new coffee trees in recent years. Bait Alal is a village in the Hayma Kharijiya region, west of Sana’a. Perched at an altitude of 2,300 meters, it is home to about 300 farming families, for whom the coffee tree is a symbol of pride. The land is passed down from generation to generation, and some coffee trees are over 300 years old.

Natural processing is common in regions and countries where access to water is limited. After picking and sorting the ripe cherries, they are dried whole on patios, with the skin, flesh and mucilage intact, and regularly turned to prevent mold from forming. Once the cherries have reached the optimum moisture content (between 10% and 12%), the seeds are removed.

Yemenia, which means "Yemeni mother" in Arabic, is the most important discovery in the world of coffee in the 20th century. This coffee offers berry notes reminiscent of SL-28, with the sweetness of Yellow Bourbon and the aromatic complexity of Geisha.
