First of all, I wish you, on my behalf and that of my team, a wonderful year 2021. And since the sweetest springs are those which follow a harsh winter, I am expecting a beautiful year, because 2020 was tough.
If you are reading this message, we play a role in your life. And we take this role very seriously, because we intend to help make this new year sweeter. Our humble participation may be reduced to a simple cup of coffee that you prepare with the beans we have chosen for you, but a simple cup of coffee can transform the way we see the world. Taking the time to prepare a coffee is a symbolic gesture, a way of taking care of yourself, of spoiling yourself. Choosing your coffee, or consulting us on the subject is a deliberate action for yourself, and not being satisfied with the first pickle is taking a position, an action to take charge of your personal happiness.

We will also tinge our discussions with our reality, our entrepreneurial lifestyle, the rurality of our geographical positioning and the chance to live in a wonderful place on the shores of Baie-des-Chaleurs. As mentioned in the text, the popularity of subcontracting, or the use of semi-processed products in the food industry makes the work of certifiers complex. Several manufacturers, for reasons of profitability, keep the origin of their ingredients hidden, while taking advantage of the local product label.
I also want to mention the goodwill of Aliments Québec in the face of my requests which come up against a broader situation which affects several areas at the same time.
It's quite a challenge to draw the line between definitions, especially when certain companies make millions of dollars by advertising themselves as Quebec products when in fact it's more or less true.

I think it is high time that we set up a rule to set once and for all the space that is acceptable to take when visiting a coffeeshop. In this way, the baristas and the management will not have to break the party of your moment by coming to tell you that you take too much space on the table.
let's have a coffee!
