Owned since 1977, Clifton Mount Estate is run by the renowned Sharp family. The estate is renowned for producing the world-renowned Blue Mountain Coffee. The farm with its elegant Great House is located in the Newcastle region on the eastern slope of Catherine Peak, at an altitude of 1,310 metres.
process
After the ripe cherries are harvested, they are sent to the mill where a machine removes the pulp, leaving the berries covered in mucilage, a sticky substance rich in natural sugars and alcohols. The berries are then fermented in vats for 12 to 24 hours to break down the mucilage. Once fermented, they are washed and dried in the sun for a few days.
